Grain-Free Granola

Servings:  10-12


1 ½ cups organic unsweetened coconut flakes

½ cup each of organic raw cashews, pecans, walnuts and almonds roughly chopped

½ cup organic raw pumpkin seeds

1 Tbsp each of organic chia and flax seeds

12 organic dried dates, roughly chopped (optional)

¼ tsp organic cardamom

¼ tsp organic cinnamon

¼ cup organic maple syrup

1 Tbsp organic coconut oil

½ tsp organic vanilla extract


Preheat the oven to 300 degrees Fahrenheit.  Place all dry ingredients into a large mixing bowl. 

Heat the syrup, coconut oil, and vanilla extract until it bubbles and foams.  Pour liquid over the dry ingredients and toss to coat. 

Spread the mixture onto a cookie sheet lined with parchment paper.  Roast in the oven for 20-25 minutes.  Remove from the oven and let cool to room temperature before storing in an air-tight container.

*To make a more traditional granola, add 3 cups organic rolled oats, ½ cup raisins, or other dried fruit, and double the cardamom, cinnamon, maple syrup, coconut oil, and vanilla extract.
