Mujadara

Serves:  4-6

Ingredients

3 ½ cups of water

½ medium red onion, diced PLUS medium organic red onion thinly sliced

2 cloves organic garlic, minced

2 Tbsp organic EVOO

1 cup organic green lentil

1 cup organic Basmati Rice

1 tsp Himalayan pink salt

1 tsp organic cumin

½ tsp organic cinnamon

1 organic bay leaf

½ bunch of fresh organic parsley chopped

1 organic lemon

Preparation

Heat one Tbsp of olive oil over medium heat and add the medium thinly sliced onion.  Stir occasionally until carmelized (soft, tacky, and dark brown)

Heat the other Tbsp of olive oil over medium-low heat in a large pot and add the diced onion and minced garlic.  Sautée until the vegetables are translucent.

Add the water, lentils, and salt to the pot and boil.

Cover with a lid and simmer for 10 minutes.

Add the rice, cumin, cinnamon, and bay leaf to the lentils.  Stir and bring the pot back up to a brief boil.  Turn down the heat, cover, and simmer for 15 minutes or until the rice is cooked.

Serve lentils and rice topped with caramelized onions and parsley.  Squeeze fresh lemon juice over the top.
